Eggs Benedict is my favourite brunch and this tasted even better than the non-vegan version. It is English muffin halves layered with sauteed mushrooms, two soft tofu squares, and smoothered in a decadent hollandaise sauce. There were so many potatoes, I couldn't eat them all.
