Pulled Seitan

What an exhausting weekend! I'm totally wiped out. But piggies are safe, and that's all that matters. We stopped in Indianapolis on the way to Illinois and stopped for lunch at one of my favorites, Three Carrots. Everything is always delicious and so beautifully prepared. We only had time to stay and eat at one place. The others we got everything to go. It's such a brightly lit clean dining area with art from locals adorning the walls. They also have the most beautiful patio open during the warmer days. My favorite was the Pulled Seitan under their handheld section. It's so unique and not to mention beautiful! This comes with mildish spicy and smokey pulled seitan, piled on top of delicious chipotle slaw, lettuce, pickles, #BBQ sauce, housemade garlic aioli on a open-faced French baguette. Just y-e-s to all of it. I absolutely love their seitan. It always has such an excellent flavor. The only negative I have is the price. Their prices are definitely on the higher side. This was $17, but it does come with a side of chips and salsa. They also have great salsa! It's so creamy! I don't mind paying mote here because it truly is delicious and the food is great quality and everything is made in-house! This was also really filling, I ended up eating the other half for #breakfast before we continued on our journey! A very delicious spin on the classic pulled pork sandwich. Excellent ingredients through the entire dish. I was not able to pick it up with my hands without making a mess, so be prepared for a little mess. (Or use a fork and a knife)
