Pesto Mock Chicken Hoagie

This is a nice option for a sandwich at Lucé. I like the Gardein chicken that they use in their sandwiches. This also has vegan garlic butter, mayo, pesto, tomatoes, red onion, banana peppers, lettuce and your choice of Daiya mozzarella or cashew ricotta. This is a good sandwich option at Pizza Lucé. My office often orders Lucé, so it's just easier to get a vegan sandwich for me rather than figuring out pizza. The chicken isn't anything special but is satisfying. I think they use some common brand's vegan chicken strips.
