Ippudo recently launched a new plant based ramen! Available at all their outlets. Consisting of 2 pieces of eggplants, crispy enoki tempura topped with grated carrots and spring onions. You are able to choose the doneness of the noodles. Love the noodles though I found the broth a tiny bit salty.
