Mushroom Ceviche

I forgot to post this dish from another Earth Vegan hotel. Not only is it a hotel, but you can enjoy the restaurant if you choose not to stay. Fresh mushrooms marinated in lime infused with cilantro. It was a great starter. The plantains gave it a nice touch so you can dip into the ceviche.
