Best lemon meringue I've ever had (non-vegan included!). This was perfect. The lemon custard was delicious, the cookie crust was just the right amount of sweet and crunchy, and the meringue needs a whole post of its own! Perfectly airy, light, and toasted. I'm not a big fan of desserts, but this was next level delicious!
