One bite into this taco and it brought me right back to my travels to
Mexico. I’m pretty sure I’ve had these same exact tacos a few times there lol. They were filled with a large variety of cooked veggies (mushrooms, onion, peppers, etc), topped with cilantro and onion. The fresh corn tortillas stole the show!!
