Kale & Beetroot Salad

It’s expensive for mostly kale and it’s not been massaged as well as it should but the dressing is nice and light and it’s overall nice flavours. A bit overly crunchy to my taste.

It was a pain to find a non carby vegan dish at the Book Cafe but after requesting one, the staff told me about this salad which was not on the menu. Really liked it though I was still hungry after - I ordered the rice dish with mushrooms and that was more than enough 😅
