I’ve been back to North Miznon a few times since it opened and every time there are more and more vegan options or things that can be veganized. I’m super impressed by the creativity of the staff. For example, I’ve never had an eggplant dish that’s anything like this!
Eggplant that’s been prepared, super tender and drenched with flavors from the olive oil, herbs and tahini smothered all over! Then it’s spread out thin in “lines” over parchment paper. Perfect to spread over their focaccia or just eat on its own. Amazing!
