Caramelised Yam Cubes

First time trying this dessert. Unique taste and beautiful presentation with dry ice to create smoke effect. Yam is fresh and has a distinguish aroma. Definitely something creative. #veganuary

While this dish was well presented (with liquid nitrogen) it was unpleasant to eat because it is extremely sticky.
