Avocado sandwich (vegan)

Rather than a sandwich, I would say it was an avocado toast with vegan mayo, onions, avocado, salad, sprouts and tofu. I appreciated its richness, even though the tower of ingredients made it tougher to handle all at once. Overall I really liked it.
