Avocado Benedict

This consisted of tofu, mushrooms, spinach, onions, tomatoes, and avocado with luscious, creamy tree hugger hollandaise sauce on a thick slice of sourdough, served with seasoned, roasted red potatoes. It was hearty and satisfying.
