Such a delicious, rich dish 🍆🍝 the melty aubergine and rich creamy cheese was the perfect combo. The food at Kashew is amazing. I only wish that a more fun/unique long pasta shape had been used . This is their new pasta dish, it's amazing! It comes with a tomato sauce with pieces of eggplant and vegan ricotta cheese. It could have used more ricotta.
