The dish name in English is Vegan Kobonshan. My first #ramen in Japan 🥹 I’m no ramen aficionado, I don’t eat it very frequently back home in Brisbane because there’s not many vegan ramen around and it’s not particularly tempting in our hot weather. BUT I highly enjoyed this! Traditional #tonkotsu broth is apparently based on pork bones and can also have pig’s trotters, chicken carcass, anchovies, egg, and/or pork belly 😭 Like how much cruelty can you pack into one dish. It was amazing to have a vegan version and it was delicioussss. The broth was rich and umami filled with a flavour of fried garlic oil. The soy meat was quite soy tasting but had a nice consistency and charred flavour. Excellent value at ¥1450. My first real Japanese ramen and the best ramen I have ever had!! It was a Vegan Kobonshan. The broth was heavenly, umami-filled, with so much garlic oil, it was a dream. There were many veggies, most of which I wouldn’t be able to name, and a grilled smoky meat that was really the cherry on top. And all this quality and quantity for the affordable price of 1180¥. This restaurant is located in Harajuku on the second floor of the building, it was opened by a famous ramen chain called Kyushu Jangara Ramen which specialises in tonkotsu ramen. It’s not super big but it has enough seating for a few groups. The menu mostly offers ramen, one burger dish and one curry dish for mains and two pages of starters that are Japanese style or western style. I would have loved to try some of their starters but only got a main on this visit. This dish is a veganised version of their popular “Bonshan ramen”, which is tonkotsu ramen with fried garlic oil - my absolute favourite ramen flavour even before I was vegan. It was so delicious, it came topped with seaweed, mushrooms, purple cabbage and vegan chashu! The noodles were perfect and I was very satisfied at the end. I would definitely come back and try the other dishes. It was priced at ¥1,180. #veganjapan #japan #tokyo
