#### Hello! And welcome to the UC Davis Ultimate Vegan Guide. Davis, home of the Aggies, is located in Yolo County neighboring with the Bay Area, Lake Tahoe, and Sacramento. Here you will find a charming college town with a Northern California vibe filled with bicycles (22,000 bicycles can be found on campus every day!!), grassy fields and beautiful trees, happy people, and most importantly, delicious veggie food! 


#### UC Davis prides itself in its commitment to sustainability. The campus hopes to achieve net zero greenhouse gas emissions. And so, you can feel a campus culture centered around healthy and environmentally conscious living. It is easy to be vegan, vegetarian, plant based, and health conscious in this community. You will find a multitude of clubs and organizations focused on animal rights, sustainability, environmental justice, food justice, and way more. One of the most treasured activities in Davis is the Farmer’s Market — families and students flock to downtown to try all of the healthy, local produce and to share a meal on the grassy field while listening to the live bands.

#### We are Athena, Isa, and Chelsea, three vegan yoga teaching babes excited to show you the way to plant based and healthy living in Davis. Athena is a graduate from UC Davis with a degree in Nutrition. Since she has graduated, she’s been traveling the world — teaching yoga and seeking out the best vegan spots worldwide! Most recently, Athena lived with Isa in Thailand where they made the Vegan Guide to Bangkok. Isa is in her last year at UC Davis majoring in American Studies and Education. She hopes to move to Bali with Athena in the summer! Chelsea is a fourth year international agricultural development major with a strong interest in regenerative agriculture. She hopes to use this knowledge to work with small scale women farmers around the world by promoting soil health education to ultimately improve women’s and gender equality and economic opportunity. All three of us teach for the Yoga Club on Campus, and we love to geek out over vegetables… and vegan donuts!

## Summary

Based in the heart of Los Angeles, UCLA is home to almost 50,000 students who come from a plethora of backgrounds. Us students are densely packed into a 419 acre campus, making this public research University seem more like a small city rather than a college campus. UCLA is known for its well-rounded balance of academics, student organizations, sports, and, of course, amazing food. UCLA has not only been rated the #1 public university in the U.S. for the past 2 years, but also topped Niche’s 2017 and 2018 “Best College Food in America” rankings. This first place spot did not come without reason, as UCLA houses a wide variety of dining options that incorporate multiple cuisines, ingredients, and, of course, dietary needs. In particular, UCLA is extremely vegan-friendly, with vegan options at every single dining location on campus. Moreover, Los Angeles is home to a multitude of vegan restaurants, and even the majority of non-vegan restaurants offer plenty of vegan options or dishes that can be easily veganized. The purpose of this guide is to bring together fellow vegans, vegetarians, flexitarians, omnivores, and the like to celebrate the wide variety of plant-based options there are on and around UCLA campus. #### Situated in the Upper West Side of Manhattan, Columbia University stands tall as one of the top leaders in higher education. Nestled across from Columbia’s campus is Barnard College, a small liberal arts college dedicated to the success of women. Together they make up Barnumbia, and share a unique partnership in academia which allow students to benefit from their interconnected relation. While the Barnumbia relationship may be confusing for most, one aspect is clear to all students: Barnard and Columbia students have full access to each other’s dining halls. Between all the exams, studying, extracurriculars, internships, and work, meals have become an important social and relaxing part of our time on campus. While Barnumbia lacks in plant-based dishes compared to NYU, there has been a noticeable improvement in the recent years. There are a variety of delicious, healthy and affordable foods for both omnivores and herbivores at Barnumbia. My goal in creating this guide is to highlight the tastiest vegan-friendly options on and off campus and feature a few members of our community that are working hard to promote sustainability. With that in mind, I hope this guide encourages the greater Columbia community to consciously consume more plant-based meals and helps students, faculty, and NYC visitors understand how eating plant-based positively impacts individual health, our environment and animal welfare. I invite you to experience the plant based movement for yourself and opt for one of the delicious vegan options I reviewed in the full guide.
