Review of Holiday Meal at Tiny Moreso by pdxveg
This was incredibly delicious, elegant, comforting, and whole food, plant-based, with everything you could ask for in a holiday meal.
It consisted of:
Acorn Squash – with an earthy, deeply flavorful chestnut and black lentil stuffing that was a perfect foil for the squash. Garnished with bright and fresh cranberry relish and pomegranate seeds.
Porcini Crusted Cauliflower – tender cauliflower with creamed Yukon Gold potatoes, rutabaga fondue, and a bright and sweet hibiscus gastrique. Next level comfort food.
Brussels Sprouts – both firm and tender, with preserved lemon, luscious maple carrot purée, and candied pepitas.
Parsnip Apple Soup – thick and creamy with rich flavors. Served with crave-worthy macadamia nut butter and fried sage.
Cranberry Hazelnut Brie – this plant-based brie was rich, elegant, and delicious. Served with crackers.
2 slices of Rawdacious Desserts Cheesecake – made with organic cashews, almonds, coconut, and sweetened lightly with agave, they were silky smooth, both rich and light, on top of a delightfully crunchy base. The delicious flavors we enjoyed were dark chocolate caramel and gingerbread.
