This is beautiful! So hard to fine lovely ramen packed with veg 

It is indeed so hard!! I was very happy to see they had many veg options.

I love Takumi! They have three vegan options for their ramen: miso broth, shoyu broth and spicy miso broth. 
I got the non-spicy miso broth and I loved it! The noodles were very good, and the vegetables inside were great (particularly the bell peppers and the sweet potatoes).
