@jonok and I have been having so many great food adventures this month, mostly thanks to the Twin Cities Vegan Chef Challenge. This isn't an entry, but was a nice appetizer beforehand. It's nice to know these are always available! They're such a creative and unique vegan dish at a non-vegan restaurant. These potato skins are stuffed with vegan chorizo, corn & black bean salsa, vegan sour cream, tajin, and parsley. They were really yummy! I would absolutely get them again. They could even be a meal if you had them all to yourself.
