When you just can't get enough veggies and tofu, you order a side of spring rolls with your banh mi! These spring rolls are packed with rice noodles, cilantro, cucumber, pickled carrot and diakon, and marinated tofu. It comes with your choice of sauce. I went with the classic peanut sauce, but the citrus soy and vinaigrette also sound nice! These come individually wrapped in plastic so they don't stick to each other. It's convenient, but a bit unnecessary.
