Ippudo is a ramen chain in Japan, which has one plant based option, 'Plant-Based AKAMARU'. It can be quite hard to find vegan ramen in Japan, especially Kanazawa, so this is a cool find. This ramen is absolutely delicious, the broth is mad of soy milk, miso, fragrant oil, and is very garlicky. It also has mushrooms, green onions, beansprouts, a bit of a spicy sauce, and some vegan chashu which seems to be made of thin, breaded and deep-fried tofu or something similar (tasty either way). The portion is also very generous! I got extra mushrooms.
Value is pretty good at 1,130 yen, and they also give you complimentary rooibos tea 👍
A great option if you're okay being around meat, given that every other dish is meat based.
