This carrot cake is truly exceptional...the best one I've had here. It's moist, airy, and not dry in the slightest. Despite my usual aversion to frostings, the one on carrot cake is essential. This frosring is perfectly balanced with the right level of tanginess that carrot cakes demand. Plus, it contains walnuts, completing the essential trio for carrot cakes: ideal amount of spice, tangy frosting, and nutty goodness!
