The Laughing Cow

One of the things that makes me the most upset with the animal agriculture industry is when they use happy animals as mascots. A dairy producer using a "laughing cow" on their packaging is so abhorrent. I'm very happy that they're exploring vegan options, but I do have to say I don't feel the best giving them money knowing that their whole brand relies on appropriating a joyful image of an animal they abuse. I just hope they see that there is plenty of money to be made in dairy alternatives, so hopefully they'll make the full switch one day. The dairy version of these were a lunchbox staple for me in high school. These and Babybel were perfect to pack with some crackers to have as a little side or snack. Now we have vegan versions of both of those products! I like these little wedges with crackers, but they do lack some flavor. I did try to melt one into pasta. Be warned, these do not melt! I really enjoy these wedges spread on toasted Trader Joe's Tuscan Pane with some warm Kosterina herbed kalamata olives. The olives help give them a bit more flavor. The creaminess and saltiness go together well. I think on its own, I prefer the Boursin vegan cheese; it's more flavorful, but these wedges are better to take on the go. #ditchdairy #vegancheese #garlic #herbs #snack #charcuterie #nostalgia #lunch #almond
