It's really cool that Boxcar Hippie has so many vegan protein options including this oat-based barbacoa. This is a gluten free protein option, so if you get a bowl instead of a burrito, it would be gluten free! The burritos have all the same ingredients as bowls (cilantro bitchin' lime rice, hippie pico, roasted corn, oregano pinto beans), but they're wrapped in a big tortilla. The barbacoa was really flavorful and I think I'd get it over the chicken next time.
