The vegetable (well, fruit) I have had the most difficulty preparing has been eggplant. I enjoy it when ordered from restaurants (especially Chinese or Taiwanese) but I always struggle to make it tasty when cooking at home. Well, luckily, I cracked the code this time when I grilled it! I cut the eggplant into discs, marinated in dressing, grilled and dressed lightly with balsamic vinegar. It was delicious! Perhaps now that my confidence is up I can try other preparation methods again with this style and a Japanese eggplant. In any case, I’m glad for a tasty win! 😊
