These vegan enchiladas were cheesy, saucy, and so satisfying!! Reminded me of the enchiladas I had in Mexico before going vegan. Their rice and beans are great too - they use veggie broth and no lard. SO happy this place offers such tasty vegan Mexican food near Temecula!
