
I love edamame and it’s rare that I don’t have any in my freezer. I prefer to buy the shelled bags as I usually use them in a meal with other items rather than a stand alone snack.
My photo is of a watermelon poke bowl I made some time back. I love using edamame in sushi inspired bowls as well as in stirfry dishes. Occasionally I’ll add them to my avocado mash for avocado toast. I find edamame to be creamy, so they pair well, in my opinion, and add some different texture and protein.
These edamame beans were delicious and super easy to prepare (basically thaw).
I prepared the watermelon poke loosely based on recipe from Avant Garde Vegan, linked below. I was skeptical but it was actually tasty, refreshing and fun. Will probably revisit next summer.
