I have enjoyed this dish from Banh Mi Up countless times because it is so good and always fresh. The portions are generous and the vermicelli also includes a mung bean & taro egg roll with soy sauce on the side. Their vegan roasted pork belly consists of bean curd, coconut milk, tapioca starch, and baguette— it has a unique texture that is both crisp and tender all at once. The vermicelli rice noodles come topped with fresh lettuce, herbs, cucumber, beansprouts, pickled carrot, pickled daikon, jalapeños and, lastly, topped with crushed cashews and crispy shallots. I would definitely recommend this dish when jones’ing Vietnamese food.
