Marinated greens, eggplant falafel, spiced chickpeas, pickled red onions, kalamata olives, & cashew tzatziki. The eggplant falafel was my favorite part for sure! Amazing flavor and presentation as always. If I were to make any changes I would ditch the kale (too bitter and overpowering for this dish in my opinion), and include waaay more pickled red onions.
