
These are my favorite noodles for making peanut noodle bowls! Not only do they have a beautiful deep purple color, they also have a nice firm texture and hold up when you mix everything together. I like their flavor as well.
#Recipe for peanut sauce (I eyeball everything and hope for the best each time 😬):
- A few big spoonfuls of unsweetened, natural peanut butter
- a few big splashes of tamari
- juice from half a lime
- dash of rice vinegar
- dash of toasted sesame oil
- squeeze of sriracha
- a touch of agave
- a splash of water if it needs to be thinned out
Great with crispy tofu, sliced cucumbers, shredded carrots, or any other veggies (sautéed or raw) you want to add.
