I had never purchased miso, but wanted to make my first "officially vegan" meal, meaning I would make something outside my comfort zone of just stir fried vegis. Miso was an ingredient in a cashew cheese sauce. I can see why miso is used to produce a savory, creamy, melted-cheese type of tang and consistency. It was very good!
