Uchu Sushi bar has the best, most innovative vegan sushi in all of Portland! Their menu has a clear vegan & vegetarian section which is always appreciated.
The Nasuyaki roll is both delicious in taste & texture! The tempura fried Japanese eggplant adds a subtle crisp among the soft rice roll, and the creamy vegan spicy mayo drizzled atop...well, this only makes the whole experience dreamier! The thought & effort into making this vegan sushi the best they possibly could really shows, rather than just relying on avocado like many other sushi places vegan version. Uchu is my go-to place whenever I’m in the mood for beautiful, healthy, picture-worthy vegan sushi.
