As someone who just turned vegetarian and is trying to go vegan I’ve been wanting to find a replacement for one of my favorite dishes, eggs Benedict. Even though it’s not exact this dish was very satisfying! I loved how the flavors of the tempeh bacon, asparagus and scramble complimented each other.
