Confit heirloom tomato, basil and cashew nut cheese mozzarella filled in pumpkin dough, dressed with sun-dried tomato vinaigrette, coconut sour cream sauce and nut parmesan cheese - this is a raw vegan dish and my first time having raw ravioli! Loved the pumpkin dough and was glad it wasn't too "raw and doughy". Went well with the slightly tart cashew nut cheese and the salad that came with it was great too!
