Happy Healthy Me rolled out a limited summertime three-course lunch and this delightful platter was their main course. Everyday vegetables have been reimagined in new ways, like diced chow chow in a citrus salad with pomegranate molasses, bottle gourd ribbons with roasted pumpkin and chickpeas and a juicy bell pepper stuffed with a delicious quinoa tahini salad. Doesn't this sound absolutely inviting? :)
