Sweet Corn Elote Bowl

This wasn't my favorite #frozenmeal from #purplecarrot, but it's not bad. It has a strong #lime flavor. The #chickpeas didn't have much flavor though, and lost some of their texture being cooked from frozen. Can definitely tell this is a #microwavemeal. It also is rated as poor on Yuka because of additives, though on the positive side it is #lowcalories, #lowsaturatedfat, and has 12 g of #plantprotein. Good as a #quickandeasy meal on a busy work night.

Delicious and quick meal, we just throw it in a pan since we don’t have a microwave. I love the flavors!

This meal was delicious. I really enjoyed the blend of the sweet corn with the green chile. Plus, the added bonus of pumpkin seeds was genius.

This Southwestern style dish was sooo good! Purple Carrot’s meals are easy, savory, convenient, and delicious. If you like Chipotle and Southwestern style food, this Elote Bowl is for you. The sweet corn was delicious! Also, instead of a plastic bowl, a paper compostable one was used which I thought was really cool!

Pretty good for a frozen meal. I added a few shakes of sazon and adobo seasonings for extra flavor.
