Little Yellows

These little yellow potatoes were perfect for making smashed potato tacos. First, I boiled them until they were almost done, but not quite, then I smashed them and roasted them with a little bit of olive oil, salt, pepper, and some herbs. Once they were perfectly roasted and crispy, we piled them on some mini tortillas, with a drizzle of ranch sauce, green onions, and tofu bacon bits. 😋 #tacos #vegantacos #potatolover #veganisnotscary #amherst

Jesse has a fabulous talent. His talent is creating #incredible #potatoes. It is a wonderful quality to have in a partner. Jesse got this bag at Food Basics for $6. It was sadly wrapped in plastic #deathbyplastic I'll have to talk to him about that. He #roasted them with #oliveoil, low and slow for over an hour. When they are done, they are crispy on the outside and liquid on the inside. When he takes them out, he throws them in a bowl and seasons them with salt, pepper and garlic granules. We always eat them with #ketchup. He makes them for us maybe once every 3 months. It is always a surprise, so it is absolutely wonderful. Yum.
