Vermicelli Cold Noodle Salad

This consisted of seasoned firm and chewy vermicelli rice noodles on top of a bed of arcadian mix greens, and topped with fresh carrots, umami-rich Indonesian-style tempeh, cashews, cucumber, and scallions.
