Vegan Pastel Azteca

This peaked my interest because it was described as a “Mexican lasagna” on the menu. It was made with corn tortillas and soyrizo filling with a red enchilada sauce on top. So delicious! It was really fun to try, and actually didn’t fall apart when dishing it up. The corn tortillas all held together and the soyrizo filling was cooked perfectly. #veganlasagna #lasagna #mexicanfood
