Vegan Lasagna

I love that this lasagna is not made with pasta strips instead it is made with vegetable strips covered in vegan cashew cheese. Yum!

Instead of pasta, these lasagne towers are made of vegetable layers! It may not be the creamy, starchy lasagne I was craving for, but still a great dish. Tangy tomato sauce with a bit of vegan cheese – gray generally tastes like a ratatouille!
