Vegan Kimchi sandwich

I remembered Toastable from a pre-vegan visit to Amsterdam, and was delighted to see they have vegan options! I had never tried kimchi before, but I’ll be having it again definitely! Tangy and spicy with cheese on a triple deck toastie. What’s not to love?!
