Vegan Eggplant Parmesan

Very delicious dish. It is a part of their southern maryland vegan restaurant week menu. The eggplant was very crispy and covered in flavorful sauce and vegan almond parmesan. Comes with thick spaghetti noodles. Very tasty food!
