Tostadas de Tinga

I was so excited to find vegan Mexican food and it was sooo delish. The “meat” was caramelized onions and shredded cabbage topped with almond sour cream (!!) and vegan queso fresco (!!!!) and pickled red onions. Beans and rice on the side. Unbelievably creamy and delicious. And the serving size is huge!
