The Vegan Popeye

The only thing I would change about this dish is more seasoning on the tofu. Otherwise it was perfection with so many nutrients. There are so many vegan options at Maywood Pancake House, so it is a little surprising that they haven’t perfected the tofu scramble. Had to smother with ketchup. The home fries never disappoint! #veganisnotscary
