Thai peanut noodle salad

Chilled soba noodles and vegetables in a house peanut sauce. They call this salad but it’s really a mountain of noodles on a thin layer of lettuce- which I didn’t mind :) It was missing salt and bit bland, but fresh.

A unique and tasty salad that’s more like a cold noodle dish. I definitely recommend mixing in the bottom of the dish where the salad greens are, even though it means toppling over the cool giant tower! The noodles and greens really complement you each other. The noodles are cool and soft with a subtle flavor. Definitely tastes like a Thai dish, with an aftertaste of basil and a bit of scallion. #MITVegan
