String Kottu with Vegan Cheese

This consisted of diced pieces of fine vermicelli-style rice noodles stir-fried on a griddle with Violife cheese, JUST Egg egg, chilis, leeks, green cabbage, savoy cabbage, carrots, and scallions. This is milder than the versions with chick'n or polos (jackfruit), but even with the heat turned down, it was very flavorful and hearty, a wonderful comfort food dish for a chilly day.
