Had the Truffle Shoyu Ramen at Mensho Tokyo Singapore and wow, it’s next level. The truffle flavor is super rich and gives the broth this luxurious vibe that’s hard to beat. The noodles are spot on too. Honestly, this would be a 10/10 if it came with some plant-based protein, like tofu, seitan, or some more mushrooms for a bit of extra bite. Rich and umami vegetable broth made from porcini and shiitake mushrooms plus kelp, infused with kioke shoyu (soy sauce aged in wooden barrels) and truffle paste, alongside crispy enoki mushroom tempura as garnishing (I believe the tempura is also available as an la carte side). 🍜🍄 Non-veg mum and I liked the soup which had depth in flavour (albeit a tad oily), slightly reminiscent of bak kut teh ahahaha sorry don't box me for making this comparison!! 🙈 Other toppings included tomato chashu which was surprisingly smoky and tasty, bamboo shoots, and spinach. 🍅🥬 Personally would have liked some tofu thrown in for protein. Loved the supple and springy whole wheat noodles freshly made in-house; you could even see the noodles being made through a glass window. 🥢 Good vegan ramen is hard to come by in SG; I often take a leap of faith and order so-called ramen dishes only to end up with generic Chinese noodles or worse still instant noodles...
