I was surprised by how huge this dish is — I couldn’t actually finish everything
on the plate because I was so full! It has beetroot hummus, scrambled tofu, roasted tomato, roasted pumpkin, baked beans, spinach, sautéed mushroom, and dark rye bread. It tasted like a delicious home-cooked breakfast and I was really pleased. The mushrooms and tofu are scrambled together which is interesting!
