New Mexico Bowl (VEGAN & GF)

This salad includes bbq cauliflower, marinated greens, pickled jalapeños, crunchy slaw, rice & beans, topped with a green chili cashew crema. Perfect combination and ratio of flavors, very filling, nutritious, and pretty too! Every vegan dish I’ve had from Cardinal is so delicious and well made — I hope they continue to add more vegan options to their menu 🥗💚😋
