Mediterranean Bowl (Sans Olives)

...my partner on the other hand, loved her meal. Despite not being fond of salads, this Mediterranean inspired salad/bowl was very flavorful, filling, and all around interesting. I'm not sure how common the gigantes beans are, but they had a nice mouthfeel and will definitely go on our next shopping list. Even without dressing/oil/olives on the dish by choice this was still a hit. The crispy pita was also an interesting alternative to standard croutons; though it was tofu at first.
