Kid’s Vegetable Caponata Pasta

this is a fully flavored pasta and I like it’s tomato base. The veggies were roasted till slightly soft yet not too mushy. I would’ve left out the garlic bc it was rly strong (personal preference). The portion was quite generous.

Perfect pasta dish for kids with a well seasoned veggie tomato sauce. The pasta is GF so it’s a plus.
